What to do with all that Zucchini?

As Summer slowly comes to a close, I have a mixed basket of emotions. I love the warm weather and freedom from the sleeping bag I feel I darn from December to April in order to keep the cold NY winters out, but, Fall is by far my favorite time of the year. But, before I get all gushy about Autumn and pies, I want to pay a bit more homage to the bounty of Summer and all the yummy, light, waist-friendly dishes it brings.,

This dish is an adaptation from one of my favorite guilty-pleasures in Manhattan. Grandaisy Bakery.
They make the most delicious yet simple pizzas that are a nice change from marinara and greasy cheese. Not that greasy cheesy pizza is evil, but Good Balance=Good Karma remember?

This dish is easy to prepare, and really fills you up. And kid tested-  two thumbs up from baby girl.

Zucchini Pizza with Gruyere and Parmesan Cheese.

Prep: 10 mins.
Cook time: 25 mins.

Ingredients:
  • 1 large Zucchini
  • 2 Flat Bread loaves (could substitute pita, pizza dough, or French bread)
  • 2 oz. of Gruyere Cheese Grated
  • 3 tablespoons grated Parmesan Cheese
  • 1/2 teaspoon minced garlic (about 1 clove)
Directions:
  • Preheat oven to 350 degrees
  • Rinse and dry zucchini
  • In a large bowl, grate unpeeled zucchini
  • Grate Gruyere Cheese in same bowl
  • Add Parmesan and garlic
  • Toss till well mixed
  • Spread evenly on flat bread rounds
  • Bake in oven for 25 mins. or till cheese is golden brown
  • Cool, cut and enjoy
Results:
Thumbs up from mom and baby.

** keep at room temp and add as a lunchbox snack for yourself or the kids
